Creature Comforts Brewing Co. of Athens, GA, has some unusual spins on year around beers. Their American IPA Tropicalia has been a huge hit locally and earned a 96 from Beer Connoisseur; primarily by not being your average IPA. Bibo, their year around Czech Pilsner, demonstrates they can do traditional well too.
Bibo pours a clear, golden color with nice small compact bubbles mushrooming into a fluffy head that lingers for several minutes. You get the traditional floral hops and bready aromas from the nose. Bitterness is present, yet restrained. Notes of floral hops and biscuit like malts jump out through the crisp body. It finishes dry with an appropriate bitterness that does not linger too long into the aftertaste.
Bottom line: Bibo is a nicely done Czech Pilsner from Creature Comforts Brewing. They hit all the right markers for the style and have built a very drinkable, refreshing Pilsner. Good enough for a spot in the fridge.
